Salad with Almond Butter

This salad is TOP. INSANELY DELICIOUS. FANTASTIC. I cannot get enough of it. I could eat it every day – for breakfast, lunch and dinner. And if you’re also totally obsessed with almond butter, this is a recipe for you.

EVERYTHING tastes better with a spoon of Rok’s almond butter. At first, I ate it with fruit. Then I mixed it into yogurt. Finally, I just had it by the spoonful. And then it hit me – what about savoury dishes?

Revolution. For real. Who would have thought that minced meat tastes so abnormally good if you mix it with some almond butter? In order not to get stuffed purely on protein, I turned this deliciousness in a healthy salad. Simple. Quick. YUMMMMMY!

Ingredients (for 1 person):

  • Approximately 3 cups of salads + vegetables as desired (or as much as it you’d like – hey, if you’re hungry, you’re hungry)
  • 120g of ground beef
  • Half of the onion, cut into slices
  • Spices (salt, pepper, garlic powder, turmeric … whatever is handy)
  • Butter or avocado oil for cooking
  • If desired, home-made mayonnaise or some simple olive oil and apple cider vinegar will do
  • 2 tablespoons of Rok’s Almond Butter (MMMM)

Instructions:

  1. Heat up the pan, add butter or avocado oil.
  2. Add the onion and cook for about 10 minutes to soften. If it starts to burn, add some water.
  3. Now add the minced meat and spices and cook until the meat is cooked through – about 10 minutes.
  4. Turn off the stove and let the meat cool for a bit.
  5. In the meantime, prepare your salad (lettuce, pickles, cabbage salad, tomatoes) and mix well with mayonnaise or olive topping.
  6. Mix almond butter with meat (I’m already getting hungry just writing this)
  7. Place the meat on the salad.
  8. Eat instantly and hide the jar with almond butter in the drawer, as it is possible that the arm will automatically reach for it and will suddenly be missing half of the jar.

Shrimp with Cauliflower Rice

Summer is here – so what a better way to celebrate than eating something that reminds you of the sea! (Unless of course you can got to the beach – then forget the cooking and go enjoy the beach :D) 

This is one of my favourite things to cook lately – it’s simple, it’s yummy and it requires only a few ingredients. You’ll have it cooked in no time, especially if you have a blender, so you can quickly turn cauliflower into rice.

Your best friend in making the cauliflower rice SPECTACULAR is ONION. Onions give the dish this lovely sweet, caramelised taste, so make sure you roast them on a low temperature for at least 10 minutes. 

To make the tastes even more superb, you spice things up with some garlic powder, onion powder, dried coriander and some lemon juice. I’m telling you – it’s simply DIVINE!

INGREDIENTS (for 2 people):

  • 1 onion, sliced
  • 1/2 cauliflower, riced
  • 150g of shrimp (or more if you prefer)
  • spices (salt, pepper, garlic powder, dried coriander)
  • lemon juice
  • butter and coconut oil for frying

 

INSTRUCTIONS:

  1. Gently roast the onions on a medium heat for about 10 minutes in some butter, until they get caramelised. If they start to burn, add some water.
  2. Add cauliflower rice, mix well and add salt and garlic powder. Cover with a lid and let it cook for another 10 minutes.
  3. In between, quickly fry your shrimp on coconut  – you’ll need about 90 seconds on each side. Add salt and garlic powder.
  4. After 10 minutes, add lemon juice and coriander to the cauliflower rice. Stir it well.
